I am digging a pond this spring of about 7' long 5' wode and 5' deep. I was wondering what would be the best stock for it, I really would like some Kio, so how many could fit in that sized pond? 4-5 maybe?

How many gallons is that? Koi require large ponds/tanks.

Your pond is a little small for koi, so how about this stocking instead?

5 Rudd (Scardinius erythrophthalmus; swims in upper layers of pond)
5 Golden Orfe (Leuciscus idus; swims in upper layers of pond)
5 Tench (Tinca tinca; swims in lower layers of pond)
6 Goldfish (swims in lower layers of pond)

All of these fish are cold water cyprinids, and the tench look somewhat like koi in terms of color

Btw the pond will be about 1300g

after reading some sources, koi could live happily in that size pond, but they would probably get stunted somewhere around 2 feet

Well a 2 foot Koi is big enough, but I don't really want them to get stunted though. The only options that are around here for pond fish are goldfish, shubunkins, koi, and fancy goldfish.

I think you should go with the fancys and mabey a few comets. Personally, I'd try pearl-scales and blue moores if you can find them. I'd do this:
10x Various Fancys
6x Comets
