It's just the product of many years of cold water living. Goldfish tend to live in cooler-water areas in the wild, and have lived in such areas for many thousands of years. As such, they have evolved to thrive in cool water, and therefore prefer it over tropical water. The inverse is the same for the fish that prefer warm water. Basically, it is a direct result of the environment that the fish live in.

In Eastern China, where they run wild, temperatures fluctuate per season. During the winter, it can run below freezing, and in the summer, it's muggy, humid, and quite warm. Thusly, they do well in most temperatures, though a cycle of warm/cold is probably optimal for breeding and the happiness of your fish in general--which is probably why goldies do so well in ponds.
