Just to get it out of the way, I should preface this with: I don't think a 55 is large enough for two goldfish. One as a pet fish (like an oscar) is a great idea, however - it really allows you to bond with the fish and have a relationship with it.

That said, your questions. No, I wouldn't cycle with the goldfish. Could you? Probably, but who wants to damage the gills and organs of a fish they may have for thirty years? Do a fishless cycle, it'll save you decades of worry.

Shunbunkin - not a good idea. This is a long-bodied goldfish and doesn't belong inside unless you own a 500-gal indoor pond or something like that.
Ryukin - sure, although this is one of the larger fancy varieties. But, hey, they all get huge, and you know my opinion on the subject.
Also, IMO, Ryukins are the most beautiful commonly available goldfish type (Veiltails just don't count since almost no one has them). Those closely-coupled bodies, upright flowing fins, and glimmering scales just can't be beat.
