I dont' think rainbowfish and bettas would make good tank mates but I don't have much experience with either. To feed lettuce to my plecos and snails I poke a paperclip through it then add on paperclips until it's heavy enough to sink. If you tie a string on you can just pull it all up the next day or whenever the food is gone.

I've used metal weights without problems. For lettuce, I take several leaves and make a bunch out of them (sort of like a flower) and then wrap a strap weight around the base. I got the strap weights from Petsmart. They just gave them to me when I bought a pleco. They're some sort of soft malleable metal strap that weigh the veggies down. I've also used stainless steel screws for weights. I just file the tip down to prevent injury to the fish and shove them in chunks of blanched cucumber (through the peel). Then I just pull the stainless screw out of the tank when the plecs are done with the cucumber. The stainless steel will not corrode if that's what you are worried about. This method has worked well for me.

I haven't had a problem keeping metal in the tank temporarily for weighting plants or food. My paperclips are also plastic coated.

I take the lazy way out...I push a fork through the veggies, drop it into the tank, and then fish out the fork and whatever is left,if anything, after 12 hours.
