How do i do a substrate change from gravel to sand?

Remove the fish & swap the Gravel with Sand. Just remember to rinse the Sand well before you use it & do not clean the filter, so you don't kill off the Bacteria.

Also, you should put some of the old gravel in a mesh bag or some pantyhose and let it sit on the new sand for about a week. This will allow the bacteria in the gravel to colonize the new sand.

Indeed. And don't change or clean your filter for 2 weeks after the change, either. This houses the greatest concentration of the beneficial bacteria your tank needs.

Also, you'll need to 'rake' the sand every so often to keep anaerobic bacteria from forming in it and killing your fish when it releases.

And, you'll want to raise up the intake of your filter off the gravel when you switch, because sand will shred your impeller and housing, effectively turning your filter into a piece of rectangular pastic garbage.
