what is the best way to change the water with a top water fish that is skittish? i did today and my arowanas didn't like it much, and gave me a mouth of water with their jumps. i had the lights off, and tried working as peaceful as possible and they still kinda jumped.

If they are a new fish, I'd just give them some time to get used to your intrusions of their territory. Otherwise, just...don't....make.....any....sudden...movements...
