How long does it take (on average) for a fish to adjust to its new home?

It depends on the fish and the enviorment that the fish is from and what it is going to. Some fish don't seem to have any problem adjusting at all, and then others can take longer. Sometimes three or four days, or longer.

There are many factors here species of fish, tank size, tank type planted etc, also other & how many fish in the tank.

Using the above there is no "Normal time"

Some will settle in straight away and others never.

great answers so far. Just wanted to add that some fish can even take weeks to get completely comfortable in new surroundings. oscars, for example, are very hardy and can adapt to many different conditions but they are also very grumpy and may "sulk" and refuse to eat for 1-2 weeks after being placed in a new tank.
