Does it mean anything when fish either sink or float when they die? I've had three deaths and all 3 have been found on the bottom. They would have only died a few hours before at most. What does it mean?

that they are heavier than the water.

unfortunately, all it really tells you is that the fish is still pretty dense, not bloated or full of air or gassed up from decomposition.

Most floaters are just decmposing and building up gasses in their gut cavity.

For animals, the entire universe has been neatly divided into things to (a) mate with, (b) eat, (c) run away from, and (d) rocks. - Terry Pratchett

Also, certain fish have small swimbladders or lack them altogether; they spend almost all of their time on the bottom. Even when they die, they stay grounded, because they don’t have much (or any) of a swimbladder to give the fish extra buoyancy. Cories are a good example of this, and usually sink to the substrate when they die.
