Self-Saucing Chocolate Fudge Pudding

1 cup self-raising flour
pinch salt
3/4 cup white sugar
1/3 cup cocoa
1/2 cup milk
60 grams melted butter
1 teaspoon vanilla essence
1/2 cup brown sugar
1 cup strong coffee

Sift flour, salt, white sugar and a couple of tablespoons of the cocoa into a 2-litre casserole or souffle dish. Stir in milk, butter and vanilla. Mix well, scrape down from sides and level the top.

Sift brown sugar and remaining cocoa over the pudding mix. Heat the coffee and pour it carefully over.

Microwave on high for 8 minutes or until the pudding rises up through the sauce.

OOOO I like that coffee bit...


and I like the microwave bit...in this heat/humidity I really dont like using the stove...

Babel, you must try it! I have a recipe very similar to that one. Best for winter desserts but middle of summer will do aswell.

Here is one I saw Donna Hay make at the Melbourne food fair.

Rich Chocolate dessert cakes. Makes 6
Buy the best cooking chocolate you can get the higher the coca % the better 75%+ if you can.

Preheat oven 180c
Ingredients
1/3 Cup plain flour
1/2 Cup icing sugar
100g almond meal
3 egg whites
100g melted, butter
200g dark cooking chocolate
120g dark cooking chocolate pieces.

Method
Place the flour, sugar, almond meal, egg whites, butter, & melted chocolate in a bowl and mix well to combine.

Spoon half the mixture into 6 x 3/4 cup capicity (or 4 small Raminikns) lightly greased oven proof dishes.

Add two chocolate pieces (NO MORE) but do not touch the bottom with them.

Top up with the remaining mixture.

Bake for 15min or until cooked, test with a skewer.

Serving.

A Keith suggestion
Serve immediatly. Turn upside down to remove, sprinkle with added icing sugar and prepared strawberries, and fresh cream.

All non metric cookers these are Metric cups convert or it will not work out properly
