This little gem sustained me whilst I recovered from surgery. Recently a colleague of my mum asked for the recipe when she saw my mum eating a portion from one of my batches. Thought some peeps here might like a squizz too. Aunty Roz’s Lentil, spinach and noodle soup This is my version of my Aunty’s out-of-this-world lentils. I hope it is up to scratch and that you enjoy it. INGREDIENTS 2 teaspoon Curry powder (optional, I think Aunty just uses the jar one) 2 tablespoon Curry paste (jar, I used Sherwoods) 1 teaspoon Tumeric 1 pkt (250grams) frozen Spinach (thawed) 1 cup brown lentils (packet says green lentils but they look brown in colour) Bean threads one little bundle (like rice vermicelli noodles but stay firmer, you can use rice vermicelli) ½ bunch Coriander chopped coarsely (optional since I can’t remember if Aunty used this) 6 dried curry leaves 1 or 2 cloves Garlic 1 x Onion diced Salt to taste METHOD Boil lentils in 2 ½ cups of water until firm cooked through (not mushy). Soaking the lentils will reduce cooking time but is not essential. As the lentils boil a froth with form on the water. Scoop this off and discard. In another pan fry onion, garlic, curry powder, tumeric, curry leaves and curry paste until onion is transparent Stir in the spinach and cook for a little so the spinach soaks up the flavour. Add the boiled lentils and water to the spice saucepan Boil kettle and pour boiling water over bean threads in a bowl. Soak for about 5 mins and drain. Place on chopping board and cut so noodles are spoon manageable. Add to the soup. Stir in coriander and some salt for flavour. HINT The noodles will soak up all the water while the soup stands. You need to know this or you will keep adding water to make it soupey and wonder where it went. Just add water when heating portions if you like soup with water. Or you can have it as a casserole type consistency. ~~~ My fish blow kisses at me all day long ~~~ |
