my KH is about 120, is that high enough so my PH wont jump back and forth everytime i do water change?

I would say yes, that's enough.

Hi,
Yes, the pH is fine. Now, you want to look at a
chart such as this:

The idea is to have at least 15-19mg/l of CO2 saturation.
So, you need to inject enough CO2 to drop the pH to
the point where the KH and pH intersect within the
accepted boundries.
