I have a 100g tank with
1 common Pleco, 1 jack dempsey, and a pair of convicts

All the fish listed are under 5" and the tank looks somewhat bare
Ive heard tiger barbs would work but what about some danios? any other fish that might work?

I'd go with silver dollars. They get large enough to not be prey, yet are peaceful.

rainbows...great color and many get large enough that they couldn't be eaten. or as inko said, silver dollars would also make a nice choice.

I have used a mixture of zebra and pearl danios as dither fish for the top of the tank to good effect.

I think that giant danios would make perfect dithers for the fish that you listed. They get around 4 inches and are too fast to ever be caught.
