My breeding pair used to produce eggs and babies like crazy, but now they seem to be in a lay-eggs-then-eat-them mode. Or maybe the eggs are gatting fungus? Anyway, the eggs are "now-you-see-them-now-you-don't" so I assume they must be eating them.

Is there anything I should do? Check water parameters? Separate the pair? Or just let this 'domestic situation' run its course?

Have you been putting your hands in the tank? Moving stuff around, planting stuff, etc? If you do, this is a natural "predator" to the fish, which would make the angels eat their eggs.

Check parameters also.Try to condition them with some more food too, fish eat eggs when there is a lack of excess food .
