Yup, you sure could. In a larger tank, I'd suggest some Characins, but you don't have the space for any but some of the smaller species. The problem with the small ones is that they are just the right size for the severums' mouths.

I'd just go with some catfish, such as the larger cories, or a pleco, or some Synodontis. I think it would look nice to have just two large severums dominating the tank, with some bottom feeders in there for variety.

If I just get 1 severum what are my options? I want some cories like 6 of them or clown loches so what could go with a servum and these peacefully and not overcrod the tank?

Loaches might eventually outgrow the 55 but it would take a while, they grow pretty slow. Cories would be okay for the bottom and a school of whatever kind of Tetra you like. If you'd rather have another cichlid to go with the Severums you could do that. I've got Angels and Firemouths in with mine.

I think that's too many. They get 5 to 6 inches. That and the Severums would overstock a 55. Go with 2.

I agree that silver dollars will get too large and are too active for a 55 gallon. I've seen several times that a 6' tank should be the minimum to house silver dollars. I'd go with 1 or 2 severums, a large school (10-12ish) of cories and a school (6-8) of a larger tetra species (serpaes, black/white skirts, etc.) or barb that won't exceed 3". You could also probably go for platys.
