My 10g multie tank has been running for just over a week now...no problems and I'm very happy with it but I have a few questions regarding water.

Everything I've read says Tangs are more sensitive to water quality and smaller, more frequent water changes are preferred to larger. What's considered 'small', 10-20%? I currently do water changes in all my tanks once a week...should I be doing it more frequently in this tank?

I don't test tank water unless I'm having a problem I did run a nitrate test this morning that showed 5ppm. What's considered the line between ok and a problem?

You'll be fine once a week, and I'd actually go with fairly large changes (35% or so) if your tap isn't too far off the water in the tank. Multis aren't exactly E. melanogenys, y'know? They'll appreciate the fresh water and tolerate minor swings extremely well.
