in a 250 gallon you can easily have 4 oscars.. Or 2 oscars and some Firemouths (and their cousin fish), or some severums, a south american catfish.. Plecos..
Stick to South American or Central American medium to large fish.. Make sure the fish are larger than the oscars mouth (although I've broken that rule, don't count on getting away with it, I've lost a couple fish that way but knew I was taking a chance)

You'll be needing alot of filtration.

DaFishman, I don't think she was asking for advice on what she should put in there or how to filter it.

Have you asked your LFSs? Mine has a large tank with a bunch of huge fish I assume people have brought in. Have you looked in the local classifieds? In mine, there are usually people whose oscars have gotten too big for their 20 gallons. ].< Although shipping would be horrendous, I'm sure there are people on aquabid or something selling large oscars. It could be used as a last resort, if it comes to that.

I'm sorry I couldn't be of more help, but California is pretty far away, I reckon. :88)

They shade the glow of it with their mossy-misty costumes,
They wear masks of silk, porcelain, brass, and silver,
So as not to mislead with their own, ordinary faces.
