Well, since it's going to be in a restaurant, how much maintenance will it be receiving. Are you (or whoever is maintaining the tank) a begginer, intermediate, or "expert" fishkeeper? Depending how much work that will go into the tank will determine what you can have, including live plants or not. If you are a "expert" at fishkeeping then I think the tank would look really nice with discus. The tank is 1000 gallons so your choices are nearly endless.

I would say... a ton of discus... they are really pretty.

In a restaurant, I don't think most customers would be attracted to any catfish. Most people like pretty fish with bold colors.. That's why I suggest either saltwater or African cichlids.
If you take a big community of American cichlids, youll have lots of problems. Some will pair up, and then defned territories, then they'll have fry, which would be lots of trouble to deal with...

How about just 1, large tiger shovelnose catfish?

Not in the tank you gave. Big enough plecs would seriously harm a ray if it decided to suck on it!

As long as we're posting stock lists now... If you follow this one, it's a good way to drain at least $3000.

1 Arowana or Giant Gourami (they can be territorial)
1 Merodontotus Tigrinus (can also be territorial)
4 Stingray; almost any species could fit in a tank THAT big!
10 Datnoids
1 Fly River Turtle (are betta-level territorial...)
Many Bichirs

However, saltwater would be awesome.

I know this would be no good for a restaurant but would be interesting to chuck in a few livebearers - leave em for a year and see how many you end up with in a tank that size......

How big is this restaurant? A 1000 gallon tank is absolutely enormous; is the owner wanting their customers to get in and swim with the fish or??? Man, that's huge. The biggest i've seen is a 250 gallon and that was probably about 8 feet long. You'd think a 1000 gallon tank, unless it's incredibly tall (which would make it hard to clean) would run 20+ feet in length.

I would make it a saltwater tank.

I'm a fan of them but oscars are not exactly 'the most attractive' fish, especially if in a restaurant. I'm not so sure that they'd suit the majority of customers and the atmosphere your famliy may want either. Something that big is going to set everything. My ultimate choice would be marines (Indo-Pacific fish-only set up) but if it must be fresh, cichlids scresm out and I'd say either
a) For 'an almost regal', sophisticated and relaxed atmosphere - A huge shoal of discus and uaru, complimented with masses of neons.
b) For a more energetic one - African Rift Cichlid Community
c) If oscars are a must - as mentioned above, any med/large South Americans would be great too.

even though its a 1000gs the bigger ca cichlids would still kill everything else. how about some frontosa. it would be pricey but look really cool. or a huge school of tigerbarbs or tetras or danios

I would personally go for a tank with specimens from many larger-growing Central and South American Cichlids. I'd throw in a couple of Oscars, couple of Jack Dempseys, a Green Terror, Texas Cichlid, a Midas, Red Terror, Managuense, and Dovii. If the tank was large enough and there were enough hiding spots, I'm guessing these guys could probably cohabit if raised up together when young.

I don't THINK that's overstocked for a 1,000 gallon And I'm pretty sure all of them are compatible. Thats what I would do with a 1,000 gallon...if I had one]

I'll have to also inquire about your skill level. If I got that tank I'd be begging to throw stingrays, bichirs, Tigrinus catfish, arowana, and datnoids in there. However, most of those are not really beginner fish, though they are absolutely awesome. If you've progressed enough in experience, this tank could even be a marine shark tank.

my mom is opening up her own restaurant and wants to have a huge fish tank installed. lucky for me since I just got hooked on this fish keeping thing for me so this oughta be fun.

well the thing is...its gonna be over 1000 gallons...which is huge lol and I get to pick everything for it...so let's hear some ideas...I kinda wanna stick to oscars and w/e else is compatible but open to anything else.
