There are a number of large plecos that you could go with, including the rhino, gold nugget, common, sailfin, and royal plecos. Also, tinfoil barbs get pretty big, too. Just don't go overboard with the stocking!

I like your original stock list.
I disagree with the no balas comment, I think Balas are perfect happy in numbers of 3 or more in a tank 90g or larger.
I also believe one could fit quite a few zebra danios in a 10g tank.
I would say add a cool eel to that list to start off with: Fire, Peacock, Tyre Track Eel etc.
Perhaps some tinfoil barbs, or maybe silver dollars?!? They would really off-set the sleek bala sharks.
How about a neat catfish of some kind- Featherfin Syno, Pictus, Black Lancer- etc. Or a large pleco- Royal Pleco, (i saw a gorgeous 5 inch juvi for only 69.99 today!, or maybe a nugget, or an inspector pleco, or a few BN, or something cool like that.

i would go with an all discus or frontosa tank
but as for large non cichlid, i would go with the original tank mates you have with the addition of a couple of feathfin catfish.

a female jag may, I repeat may be ok but a male would definitely wind up as the sole inhabitant.

I agree about the oscars. They're so commmon, don't waste a 125 gallon on them. The Bichir idea sounds sweet.

Well it's your tank, do what you want, lol. I'm just stating my opinion.

WHY DOES EVERYONE LIKE OSCARS!!!!! sure they're cute, but where's the aggresion?? ( and you can only put 2 oscars in a 125) sure feeding time gets exciting, but i'd go w/ a dovii or a jag, discus in a tank that size would be nice, maybe SW? you could also go w/ a nice african tank, i'm thinking MAYBE fronts? (i 4got if the min is 180 or 125)

(and plus a 125 isn't a HUGE tank, you want a huge tank, go w/ a 1000+)

OK, yes, I'm with Tim. A big tank of Boesmanis, I wish I had a 125 full of Boesmanis ... wait, wait, I did have one!

Honestly I'd leave the Balas out. They're great fish but even 12" is a conservative estimate; putting active 12" schooling fish in a 6'x1.5' tank is rather like putting Zebra Danios in a 6"x1.5" box - not exactly enough space.
You should have great fun with the others, though! And a Bichir would be fun. Maybe a single Severum?

Well if you don't get plecs you could always go for bichirs! An eel could be really cool in that tank. Prochilodus would be cool too, and get pretty darn hefty.

Those are a few ideas, I'm sure others will come up with more. :%)

Angelfish aren't "huge" fish, like the originator of this thread is looking for. They really only get to six or seven inches long. Plus, he doesn't want cichlids.
