In a couple months, I'll have some room to move all my tanks into another room. At that time I figured I would give my fish a larger tank. The cheapest and easiest way is to get a 30 gallon(36"x13"x16" and just use the filters and heaters I have now.
For the stocking I was thinking 8 White Clouds, 6 Zebra Danios, and 6 Peppered Cories. OR 6 Zebra Danios, 6 Peppered Cories, and 3 Platies. The first list is the one I'd prefer, but any comments and suggestions would be great.

Thats my vote...
However that's rather understocked for a 30....they've got lots of surface area (compaired to a 29 anyway). You might find that you could increase stock a bit more than standard....I'd say drop the zebras, and go with white clouds, gold barbs and corys.....

Wow, and I thought I was pushing it with that stock.
I need to have the 6 Danios in this setup(for a few reasons), but no more than 6. But I'd be willing to add more Cories or WCMMs. How many of each would you suggest?

In case it helps, the tank will have two Penguin 125 filters.

I mention understocked because none of those are heavy waste producers. What I'd suggest is start with the stock you mentioned....if the danios are a must than that's fine...zebras are some of my favorite fish...after the tank has been running and is fully stocked see how your nitrates are, if they're low you might be able to increase, each tank is different so IMO it's hard to say X or Y ammount of fish.
More important than gallonage is surface area and filtration. The surface is where the gas exchange occurs after all .

Just my opinion anyway .

Thanks for the comments, Babelfish.
I'm actually just going to start with just 6 WCMMs, 6 Zebras, and 6 Cories(since I already have those fish). I'll probably wait 2 weeks, then add 2 more WCMMs. After that I'll just monitor the nitrates(like you said), and if possible, I will add just 2 more Cories and leave it at that.

Are you planning on having any algae eaters? Seriously you can add a few more fish to that tank, maybe a pleco, or some ottos. Also, I think that setup wiould look nicer with a larger fish in there, instead of just schools/shoals of fish. Something with some nice colors, maybe a Bolivian ram? Just an idea...

I do like Ottos, but no, I'm not planning on having them in this setup. I've gotten so use to just wiping down the glass that I really don't have a need for an algae eater.

Bolivian Rams are a great looking fish. But, if it is possible to add one or two medium fish, my first choose would be male Swordtails. I've just always liked the look of the long tail.
