The taxonomic classification of a fish often changes and gets updated, especially with cichlids. I would like to know the best way to keep up with the most current classifications and any changes as they occur. Is there a resource that people know of, or a site that regularly updates the classifications?

Well, for catfish I find that PlanetCatfish is the best for up to date taxonomic information. It is the first and only site I've seen that has listed Barbatus corys (along with related species) into their new valid genus, Scleromystax.

Loaches online is good for loaches... I think specific places like that are the best bet...

The internet is definitely the place. AFM's Danio article also gave some name changes that I believe must be fairly recent (Zebra Danio's are now Danio rerio... I had no idea!).

from what I can tell as far as cichlids are concerned, this site has the most current information as far as taxanomic changes go.

Jason beat me to the punch. cichlidae is by far the most up to date taxonmic reference for cichlids. period.
