I'm not sure if i'm overfeeding or underfeeding or if it's just right. When i feed my fish, all of them are really anxious to eat, so i give them a lot of food. Later a see the gouramis pick food off the bottom (am i underfeeding?), but at the same time my platys become huge (am i overfeeding?)

fish just tend to eat if there is food around and they have space in their stomach.

the answer to your question 'over or underfeeding' depends how much food you are giving them, and how often

how many pinches of flake, how big of a pinch, and how often do you feed?

You don't want food resting on the bottom for more than a couple minutes. Your fish will always appear hungry, that doesn't mean you have to feed them all the time. Fish are cold blooded and don't need nearly as much food as you do. Great whites if they were human would live on a single mouse a day. So you can see they really don't need a lot of food, they should not be getting thinner, but at the same time they should not be given so much food at one time they can eat it off the bottom all day.

A hungry fish is a healthy fish. Their instinct is to eat constantly, so the gouramis are just kinda foraging, being natrual. When they stop eating, that's when you worry. Keep feeding like you are.

I would suggest that you maintain this method of feeding. If you are not experiencing drastic fluctuations in water quality, and fish are not dying, infact flurishing as you suggest, I'd say its just right.

I heard that it was a slice of bread every other day.

Nevertheless, I wouldn't worry too much about the feeding as long as your fish are a)appear to be healthy and b)are eating when you feed them. I feed my tiger barbs once every day and they devour the food in less than a minute, yet some are still a little pudgy.

sounds like you are feeding the right amount of food to me since they are not skiny.
