I followed the suggestion of the cocktail shrimp, and the ammonia levels are crazy and the nitrite levels are climbing. Question: do I leave the shrimp in the tank for the entire process? My first tank I used live rock to cycle so that question never came up...Thoughts?

Now that you have a significant ammonia reading, take out the shrimp. Once everything clears up, the bacteria population will be large enough to support a couple fish. After all ammonia/nitrite is gone, maybe do a water change before adding any fish to help clear up anyhting. Some fresh carbon wouldn't hurt at that point either.
