I've heard that crayfish are actually quite easy to breed, is this true? How do you sex them?

Sexing can be very hard, but generally what people do is look at where the genital openings are located. For males, the openings are behind the posterior legs. For females, they are under the third pair of legs from the rear.

To condition, just feed the crayfishes a little more than usual, especially the female and provide some hiding spaces. There are more specific measures to take, but they are dependent on the species.

Eggs hatch a few weeks after being laid and fry are generally scavengers. Theyll eat almost anything that can fit into their claws and mouths.
