I have a crayfish in a 20 gallon tank and he completely destroyed my live plants, tearing their roots up and clipping the stems and stuff. I do not have any kind of hiding place for it.
If I get a 55 gallon aquarium and get a little cave for him to hide in, will he leave my plants alone? I would like to get 2 in there but not if they are going to rip my plants apart, I think he was just doing that to try to cover himself. Not real sure.
Also, will the crayfish leave a Pleco alone?

hmm I highly doubt he will stop eve then. Crayfish love to do their own aquascaping and will more than likely move their home around in a new tank. SO he probably won't leave the plants alone.

Plecos are quite stationary and bottom dwellers so the crayfish probably will not pass up the chance for a meal. I could see mayb if it was a 14" pleco or something being able to fight of the crayfish. But I wouldn't recommend a pleco that size for a 20G or even for a 55G. the smaller plecos tend to be more peaceful and will more than likely be killed by the crayfish.

Crayfish tend to do best in a species tank.

*agrees with alex*

Crays will dig up everything, hunt down anything they can, etc...they're too destructive to keep in planted community tanks.

IME they do best either alone, or with surface dwelling fish (danios work good)
