The crayfish will eventually grow, but if i were you, and you wanted a river look (if that is what you are going for) i would get one or two crayfish and then buy feeder guppies. The guppies will breed so fast that it will be impossible for the crayfish to dent the population. The science room in my mom's school has a tank set up like this and the crayfish might take a guppy or two, but it is impossible to tell.

That's just dumb and cruel. Also, it makes it alot more difficult for the crayfish to climb, eat, and move around like they normally would. Please do not put rubberbands on them...

In addition, long-term constriction of the chelae would likely spur fatal molting complications or muscular/exoskeletal atrophy. As I understand it, the lobsters of live seafood familiarity are purged via starvation through their stint in the display tank (the rubber bands also serve to preclude fighting-induced degradation of outward quality [as loss of limbs] and thus ensure marketability to customers, cannibalism [and thus loss of revenue], and consumption of the blue crabs typically housed in the same tanks).

I know that several species of community-suitable dwarf crayfish that could suit your purpose are available in the aquarium trade.

Oh yea, almost forgot about that little guy. But, having any crayfish is still a risk no matter their size. They all have an aggressive temperment.
