Never kept them, but found you a few links and I'm sure some of the resident invert keepers will swing by to help you out:

[link=http://www.nativefish.asn.au/yabby.html]http://www.nativefish.asn.au/yabby.html" style="COLOR: #000000[/link]
[link=http://www.abc.net.au/creaturefeatures/facts/yabby.htm]http://www.abc.net.au/creaturefeatures/facts/yabby.htm" style="COLOR: #000000[/link]

There also seems to be quite a few recipe sites for the yabby, but I didn't figure you wanted to know how to make them into a nice spaghetti sauce

Good Luck with them..

What is the store in question? Outside of Australia (where "yabby" is colloquially used to refer to any crayfish) the term usually refers to Cherax destructor or allied species. I would not suggest yabbies for the standard community aquarium, as they have a tendency to tear apart planted arrangements and consume cohabitants.
