Could I keep a pair of pearl gouramis in a 38 gallon with black neons, platies, cories and a BN pleco? I'm not so much worried about the other fish but more with the size of the tank.

Yes, i think that you can keep them, but try not to overstock with the Platies, especially when they'll breed. Maybe the Black Neons will eat much of the fry.......

I've got a separate little tank for my fry and I know a LFS that will take them when they get big enough

could I put some ghost shrimp in there or would a gourami think it was a nice snack? If they would eat them I might just stick with some rams because I've heard people have had good luck with rams and ghost shrimp.

The gourami probably would eat the shrimp.
Rams are very cool fish to and are fun to watch if you get a pair that will spawn, I would take rams over gourami's any day, because they are smaller and have lots of personality, also they are pretty easy to take care of.

Pearls might be fine with shrimp. It's actualy the smaller gouramis that are the worst for shrimp. The bigger gourami species are more likely to leave them alone. I never had any trouble with 3 spots and shrimp but sparkling, spiketails, and dwarf gouramis would wipe them out. Rams are hit or miss especially if you end up with a breeding pair. It's not guranteed with any of those fish but I'd mix pearls and shrimp before rams and shrimp.

I have a similar setup, no problems at all. As far as the platies breeding, gouramis are excellent at fry-control so that might not be a concern.
