Would it be ok to mix endlers with guppies? Or would it be better to do just endlers or just guppies?

Do one or the other. If you mix them they will breed with each other and create hybrids, thus distroying the bloodline of endler's, which are close to becoming extinct.

Yeah, you'll end up with hybrids. But considering how much endlers breed, I don't think there's a chance they'll become extinct. Maybe extinct in the wild where a dump was built next to their lagoon. Unfortunately, that seems to be the case with a lot of fish.
