I've just set up an Aquaclear Pro 75 wet/dry filter with built in skimmer for use in my 55 gallon FOWLR tank. I'm not exactly sure how to adjust the air valve on my skimmer. Should the water be flowing all the way up to the collection cup in the skimmer?

No, the water should be either below, or in the riser neck. Only "dry" foam should be in the majority of the riser neck and going into the cup.

I don't know about the other brands but Aqua C says that it will depend on your bio-load.So no the amount of foam will vary.

it should be a dry foam...not a wet foam. Most skimmers/tanks will have a certain time(s) of the day that you collect more skimmate...it should be pulling out a decent amount of dark skimmate weekly.
