Convicts are cichlids and I wouldn't put it past them to destroy whatever plants you put in the tank, eat them, move them around, dig 'em up. But like I said he anubias has a shot since it will root down to a rock or driftwood and it's a very sturdy plant, plus most fish don't like to eat it. Personally I'd just use fake plants. On top of what? If it's 10G or larger(though a convict should be given a bigger tank than that) it's not enough light for cabomba to do well.
