I'm not sure what kinds of plants I have. I have one that has very long, thin, and somewhat wide leaves. I have another that is just this large mass of hair-like stems plus it has no roots. My last kind grows out of a bulb and has normal sized leaves; one leaf per stem. Also, since I don't like lead anchors for my plants, would it be safe to use silver solder in the same fashion?

Plant 1 sounds like a type of sword plant, an echinodorus sp.

Plant 2 sounds like java moss

Plant 3 could be apenogeton

The lead anchors will be fine as long as you remove them after the plants start to root. The lead is insoluble and will not harm your fish for short term use. I have no knowledge if the solder will be of any harm to the fish or plants.

Thanks. I didn't realize these anchors had lead in them until recently and that they were for short term use only. I've had these in the tank for quite a while now.

No problem. It shouldn't be a big problem, as it takes a long time for the lead to enter the water. I've forgotten a few as well. Usually the problem is that if you keep the weights on the plants they will rot, so it's usually a good idea to take them off. At least that's been my experience.
