Most plants can tolerate cold water, not freezing but cold, the best one that comes to mind are lotus, hornworth, water whisteria.

it can also tolerate the cold temperature, but it's more light demanding.

I use water wisteria, and it's flourishing (growing above the surface, even). Also, vals seem to do well in cold water.

If you want a fast growing plant that gives that "jungle" look you asked about, I suggest the hornwort, or try anacarus. Now if you want a really nice looking center piece plant, go with the Madigascar Lace, as these are cold water plants that actually don't do well in warm water.
