I'm planning to switch the substrate in my 2g betta hex to flourite/gravel and I'd like to add a few plants. The tank has an incandescent bulb which surprisingly I've had luck with in other tanks.

Anyhow, any suggestions on plants for this type of setup?

Emmm red temple plant alternanthera reineckii is one of my favs, can remain red in 2wpg (floro of course cant' promise on incandescent) and can be pinched back to make it full...or let grow tall.
