Adding substrate is alot easier and you might want to just leave it since you have alot of good nutrients in the mulm for the plants as it is. If you add, add small portions @a time so that you dont' burry your old substrate causing bacteria loss. If you change substrate compleatly, save as much of the old and place it in shallow containers for a few weeks while the new substrate builds it's bacteria.
