Are Black Mystery Snails and Gold Mystery Snails considered Apple Snails? I read they were in the 120-species Apple Snail family. Also, is it okay to have just 1 snail in my ten-gallon? Thanks so much.

And sure it is ok to have only one. But remember that snails count towards your bio-load (means at least 1 fish less).

Generally black mystery and gold mystery snails are 2 different applesnail species. The ones usually sold as gold mystery won't even physically fit in a 10g when fully grown. The black mysteries are always the smaller applesnail species because the large ones don't come in that color. There are also more than a dozen colors the black mystery aka bridgessi applesnail comes in including gold. Buying a gold mystery snail is a gamble which species you'll actually get unless you are really good at identifying snails.

Yes you can have just 1 snail in a tank, but honestly I would rather have the additional fish at least they don't purposefully go after the plants heidi

Small applesnails(bridgessi) do not eat plants. They are mostly carnivorous and prefer fish foods over plant matter or algae. They will nibble algae a little in passing and eat some vegetables but I have 50 in a 90g planted tank without a single chewed on leaf. The large species of applesnails and giant ramshorn(marisa applesnails) will eat plants and can strip a tank bare overnight.
