Ok, I remember buying these at Wal MArt one time, and i put them in my tank and they grew to the top and flowered. If I dont want them to the top of my tank, could i trim them to about half way, or would the plant die?

You should either trim them at the base of the plant or not at all. If you trim half the leaf it tends to just rot anyhow. Same with a lot of similar looking plants. Vals come to mind.

Maybe with stronger lighting they would not need to grow all the way to the top? I have had these bulbs twice but I think I must have got a different box this last time. My first bubls produced a plant with short, spear like leaves that you would like, they only grew about 6 inches. Then it also produced the very long stemmed leaves that reached the surface and looked like lily pads. The plant I have now looks nothing like a lily pad. It has the typical spear leaves but they are on the surface, the long stem is the only thing you see from the side.

If your plants are well established and good growers you could trim off (at the base) each leaf as it reached the surface and just enjoy the younger leaves that it puts out.
