I have had a female BN for a few days. She is settling in quite well. Sometimes though, when I look at her she is light and dark brown striped with a few faint spots - at other times she is a uniform dark colour with more noticable spots. Do they change colour?

yes they will change colour depending on mood or on surroundings they are trying to blend in with

Yep. I have a male and he changes his color sometimes. He had a spot on his head that was yellowish colored and I thought something was wrong....but thats what they do.

Sometimes it may be stress that causes them to change.

Maybe it's camonflage, but yes, they change their color.
