The fish store employee probably recommended three angels to try to help distribute aggression. Unfortunately, that's still too few fish for that purpose, and you will have problems if two of them pair off and start ganging up on the third. You probably do not have to worry about this right now, though.

Another thing that you should definitely keep in mind, is that a 29 gallon tank is a little bit small for three angels, whose bodies alone can grow to be 4-6 inches long and wide. It's a great size for a single mated pair, but for the community that it sounds like you want, there aren't a lot of options simply because there isn't a lot of room.

In order to add more fish to the tank, I'd suggest getting a filter rated for 40-50 gallons to keep up with the added bio-load. Also, keeping on top of regular water changes and gravel vacs will help a lot. Plans to upgrade to a larger tank in the future (within the next year) might be a good idea.

That said, a small bushy-nose pleco might be nice, or a school of one of the larger tetras like lemon, rummynose, or diamond tetras, or some rasboras. Get at least 6-8 of these.
You will then have a technically overstocked tank, but with good filtration and regular cleaning, it could work.

Hoping that there must be a word for everything I mean...

I think you can add a school of Tetras or some Corydoras or a BN. With the Tetras & Corydoras i would add 6 or 8 but only 1 BN.
