Hi,
I would set up the 125 tank and get it running, planted,
and filtered. Use mulm from the substrate of the 75 to
seed the 125, and move some of the more hardy of the
critters over as well. Perhaps even do a 50% water change
on the 75 and put that water into the 125 as well.

Course the whole plan goes out the door if you have to
physically place the 125 in the space now occupied by
the 75. I don't see you successfully moving the 75 out
of the way completely assembled.

Get the 125 gal. running & cycle it well, than place the fish of the 75 gal. in the 125 gal. over a period of days & then empty the 75 gal. & you can sell it. You can also use some of the water from the 75 gal. for the 125 gal. tank.

In addition to what's been mentioned I'd suggest doing the actual transfer as if they were new fish from the LFS and doing a nice long acclimation.
Even though this is water from the same source (your tap) variations in the tank water they're in to a tank with mostly new water may be signifigant. If possible net out the schools that you have same species at a time. That way they'll stay with their schoolmates (is that what you call them :%)) which should reduce the stress. Leave the tank lights off on both tanks as well.
