Olive apple snails are when the shell is gold with a dark body inside instead of the light body of most gold apple snails.
This site has good pictures of all kinds of apple snails (and she's a wonderful person to buy from, too, if you're so inclined)

You pack them pretty much the same way you would fish. Styrofoam insulation, double bagged with 1/4-1/3 water and the rest filled with pure oxygen if you can mange it. Don't feed the snails the day before packing so there is less chance of hevily soiled water. If it looks like it's going to be cold weather during the trip, a heat pack might be a good idea.

I've found the snails usually ship fairly well, but getting them acclimated is a slow process requiring patience. Definitely take over an hour to acclimate the new snails slowly, and ask the person you're getting them from what their water parameters are and try to match them as best you can. A few drops of marine iodine (for reef tanks) will help them stay healthy, and if you have water below Ph 8, buffer your water a bit and/or add a liquid calcium supplement (also for reef tanks, but with both of these supplements use only 1/4 to 1/2 the dose recommended on the bottle).

pH is just under 8 in my tank, very hard water with a lot of calcium.

the weather is fine at about 18C.

is it best for the container to be flat or tall?

Flat is actually better because you can get more surface area, and therefore more oxygenation into the water. Just covering the snails is plenty of water. Just make sure to use newspaper or bubble wrap for padding so that the bag doesn't move around a lot while the box is being handled.

Hard to tell in the pic but looks more like genetically an ivory than a golden. The shells of ivories usually turn slightly yellow from pulling minerals and such out of the water. I only know of a handful of people that can raise pure white ivories. Here's a pic of a striped olive

the colour didn't turn out properly, but they realy are a proper deep golden yellow
