I want a pair a Pearl Gouramis, and was wondering if they have to be a male/female pair, or would two males get along as well? Thanks.

Depends on the size of the tank and the personalities of the individual gouramis. Normally I'd advise against it, but pearls are generally pretty benign. I think two males would be fine together in anything above a 30 gallon tank.

Out of curiosity, what else is in the tank?

It's a 40g tank, and right now it's empty, just got finished cycling it... going to get fish sometime this week.
I plan on putting in 2 Pearls, an Angelfish, a Dwarf Gourami, some Kuhli Loaches and either a small school of something or some Platys.

In a 40 gallon tank they would be fine. Personally I would go for the male and female, as the two males might squabble a bit.

There should not be a problem at all. In the 5ft tank I have had up to six male Pearl Gourami and never a problem. They like plenty of top cover I would recommend a floating water sprite.
