I was wondering how long it takes a male guppy from birth to mature with his full colouring?
I have a guppy who I thought was all growed up and he is pretty enough but recently a whole lot more colour seems to be happening. /:'

14-18 weeks is average for males. Are you breeding them, as this can cause them to display more color.

Once they reach a size where they won't be food for the other fish, I do put them back into the community tank with the adults, so they would be displaying to females, yes.

Not having breed Guppies for ages I think you will find it will happen as soon as they are fully grown. Again this will vary on your conditions and the feeding program.
Finally the main point is the breeding, if there is no colouration in the breeding to start off with it will never happen, they will colour up but never to that special colouration you are looking for.
