Hi,
Leaves dying and new ones replacing them is normal,
and every two weeks or so sounds about right. The bananas
should look nice and green and be firm. If they are
discolored and mushy then you either have them planted
too deep (only the white roots should be buried) or there
is not enough nutrients available for that plant. You might
try using some plant tablets or plant sticks pushed into
the gravel around the cardinal points of the compass
(plant). Don't use whole sticks, instead snip them in
halves or quarters and push them into the gravel near the
plant roots around the plant.

By the way, I would "unbundle" the densa and spread the
stems out. Left in a bundle the plant will die from the
wrapping down and a good portion of the stem as well.
