Hi,
my plants are pearling at the moment and want to no why is it different from day to day, some do then the next day they dont and when i did a water change yesterday within 5 minutes of filling the tank back up all the plants went crazy and started pealring like mad but then the next day they stpo why is this. running co2 and have 3.2w per gallon of light and kh is about 3 and ph is 6.7

Plants may "pearl" immediately after a water change if you are doing a water change with tap water. The tap water "degasses" in your aquarium releasing CO2 and causing the effect.

Plants release oxygen during the day. Pearling occurs when the aquarium water has become supersaturated with oxygen and can't hold anymore. The oxygen the plants produce then show up as visible bubbles on the plant leaves.

At night the plant ceases to produce oxygen and the O2 level drops. It takes quite a few hours the following day to build up again thus pearling usually occurs late in the day or evening.

As Bob said after a water change you've put in a load of new enriched tap water which speeds the whole thing up.
