Adrian decided to suddenly be social with a couple of people at his work. They are coming next Friday night for dinnner.

Can anyone help me with some ideas on what to cook? Nothing thats going to cost the earth to make or take lots of time to cook. I dont have alot of time these days.

I'd do it all in the oven, except the salad of course. A roast, maybe a lamb leg or beef tip roast. Start the oven as hot as it will go, wait for it to get there and put the roast in uncovered. Once it get back to 500 degrees, turn it down to 350, (F not C temps, you'll have to convert) and cook for 15-20 minutes a lb. That'll make it medium to medium-rare.
Put potatoes and a green bean casserole in an hour before you want to serve. Toss a salad and you've got it.

Being that you don't really know these people, see if Adrian can find out if they are vegitarian or not. The worst feeling is greeting new guests with a prime rib, when they are expecting veg. lasagna.

I agree completely with LB. What was he thinking? At least he gave you a bit more notice than I used to get (one day at most, sometimes a call from work - "I invited some people over tonight, make something" - not going to tell you what I did! ).

I would also go with LB's suggestion. Pasta, salad, garlic toast and a bottle of wine. Make him do most of the cooking.

Heck Chicken Flourentine is relatively easy

Take your boneless, skinless chicken breasts, pound them a bit so they are a bit thinner (or not), place a piece of swiss cheese on each one, slice of ham, some cooked spinach, and another smaller piece of swiss (if you want). Roll it up shove a toothpick in it to hold it together, place them in a baking pan...do however many you feel like/want/have the stuffes for (usually 1/person is enough unless they are big eaters) Cover this with cream of mushroom soup 1-2 cans your choice throw it in the oven on 350* F for abt 2 hrs (heck forgot, cover it first with foil) and back till they are done...make up a batch of rice, some green beans, salad, carrots, whatever veggies you are craving and wanting, and serve fairly easy...total prep time at most 15-20 mins.

Looks very impressive, tastes wonderful

when serving put the juices/soup in a gravy boat or whatever and serve it over the rice, chicken breast each, etc, etc....

Good luck, and I do kind of favor the idea of roasting Adrian for this one, but heck you love him right

Im probably gonna get some flack for this on a fish site, but trout is easy. takes about 15 -20 mins.

Put trout in small baking tray, cover with strips of butter (about half a pound), sprinkle on some mixed herbs and crushed almonds. Cook for 10 minutes on one side, flip em over and squeeze over half a lemon, cook for about another 7-10 minutes , serve with a few slices of lemon, and a splash of its own butter. Add a few boiled new potatoes (preferably minted) and some mangetout and baby corn.

Easy peasy.

squid and chorizo stew.

Fry an onion til golden
Add a couple of cloves of garlic (to taste)
fry a chorizo ring until it's sealed and juicy
add a tin of tomatoes (chopped for preference and dont get realy cheap ones)]
simmer for about 5 mins
drop the prepared squid in (about 5 squid for 4 people)
leave for another minute or two

Prepare rice as usual - to make it look more impressive, a tiny bit of saffron in the water will make the rice have a lovely colour and delicate flavour

add lots of coriander to finish

serve with tasty spanish style crusty bread

I think i'm going to go with Heidi's suggestion for Friday night. Sounds yum!
I will use some of your other suggestions as meals though. ATM I need quick stuff to cook for the family, dont have time to spend hours on food prep.
