All the above except the tongue. One of my earliest childhood memories was of being at my grandparents house and seeing an entire beef tongue, in its entirety, sitting on a serving platter on the table. It had been cooked and refrigerated and they were in the process of cutting slices off and making sandwiches with it. BLECH!

All cow (Female) meat is second grade quality, where as Beef (male) has a far beter quality rating.

The fat on the cow is a paler and yellowish colour in comparison to the clean whitish colour of Beef.

I dont eat much beef now but I am fussy what I eat and is only Scotch Fillet steak crivacked (sealed in vacume packed bags) and keeped at a lower temp but not frozen. Yes it is dearer but worth it. Good beef is not cheap but cow (usualy sold at supermarkets prepacked) is.
