keithgh *Ultimate Fish Guru* Posts: 6371 Kudos: 6918 Votes: 1542 Registered: 26-Apr-2003 | Here is the actual recipe and it is (Garlic and Wine Flavoured Rabbit) Being a mad cook I am interested in its origin. One wild Rabbit recipe I came across said put over a slow fire now that must be an old recipe. (Serves 4) 1 jointed rabbit 1 bottle of red wine 2 or 3 bay leaves Oil for frying A large quantity of garlic - enough to cover the bottom of a frying pan METHOD:- Pour about half the bottle of wine over the rabbit and leave for a few hours or overnight. Peel the garlic and put in a large frying pan with about 3 tablespoons oil. Heat gently, add as many joints of rabbit as will fit in the pan and fry until brown on both sides. When all the rabbit is fried return it to the pan and sprinkle it with the wine in which the rabbit was soaked. Add the bay leaves. Cover and cook gently until the rabbit is tender. This may be one hour if the rabbit is young, up to 2 hours otherwise. Add more wine if necessary. The recipe is no problem it was the translation of the recipe name I was concerned about. Babel Fish Translation does not have Maltese in it at all. With the number of biological controls that have been introduced to Aus to combat feral rabbit populations I wouldn't even consider eating a rabbit that was not bred and raised specifically for food purposes. The taste may not be quite as good as a wild rabbit, but I'd sacrifice a little taste for a product that is more likely to be certified as healthy. G_T Never be afraid to try something new.
