I was wondering at what point, if any, would I have to start considering adding anything extra to help my plants.

Ferts, CO2, extra filtration/water movement?

So far I've got a fair few (1 Anubias, 6 Ambulia stalks, 1 Java Fern with daughters growing, and 3 of a plant whose name I have sadly forgotten).

All in my 7 gal heated betta tank.

I haven't added anything to assist them so far, and since I don't think, well am not sure, if it's possible to overplant a tank I figured it'd be best to ask ^^

Though I know the obvious limit of leaving enough room for the fish so worry not, that's covered

Hi,
With all those plants in a tank with just one small fish,
you may, eventually, need to add some nutrients to the
tank.
This is a site that will help in that decision:

If your plants start showing these symptoms, then it is
time to start adding fertilizers. You will need to be
careful as to the quantities as figuring out how much
to add for the capacity of the tank can be tricky. You
need to determine how much water is actually in the tank.
Remember, a 7 gallon tank with plants, substrate and any
ornaments, does not hold 7 Gallons of water. If you use
7 for your math you will wind up over dosing the tank and
create all sorts of other problems.

That is a worth while site for you to read and understand about plant nutreints.
Also especially the exact amount of water in the tank. My Betta tank is sold as a 45lt tank but the actual water capacity now is 32lt. Substrate, and DW can take up a lot of space even the filter, airstone, and the heater could add up to just under a lt. The only way you are going to get the exact amount of water in your tank is to take the fish out and completly syphon all the water out then measure it as you return it.

Ferts I use Seachem in the Betta tank and a LFS made for the 5ft tank. Seachem is not cheap but I buy all mine on the www and it works out a lot cheaper.

A good liquid fert would certainly help the plants in your tank. Co2 possibly not worth it as it can be very expensive to set it up also it cannot be used if you have a good water surface movement.
If you are in SE Melb I can give you an LFS who sells the liquid fert at a good price.

I would also suggest using an air wand powered by the very small Rena air pump they are extremly quiet and a very reliable pump.

My main problem is the anubias leaves seem to develop brownish spots, not all though, and my other plant has a slightly browned leaf tip.

I would get a full water peramiters test done just to see what is missing in your water or if something is not correct.
