Yes, it's grown rapidly ^^;

I was wondering how much of it is fine to trim off, as in how far down the main stem. Also whats the best way to trim them? Plucking it off or using a good clean pair of scissors?

I've trimmed the plant a couple of different ways with
great success. You can snip off the top couple of inches
and plant the tops elsewhere in the tank. Or you can snip
the plant in half and do the same thing. The original
base will then grow a new top and rapidly grow to the
surface. Then you can trim it again.

Eventually, after several trimmings, the original plant
base will become woody, and a darker green in color. At
that point, I'd pull the plant and replace it with a new
top from one of the others.

Yup, ive always done that, i just nip the tops off and replant them. Sometimes they fork where you pinch them off.

Where you cut it, it will start shooting new shoots as mentioned usually two one each side of the stem. Before I would plant them I would let them float for a few days. Also when planting the new cuttings make sure there is stem only if there are any side shoots (not fine roots) they will rot and will possibly not grow or start to polute your tank with dead plant material.
